Description
Grated yellow cheese, such as cheddar, has a distinct flavor that ranges from mild to sharp and a creamy, slightly crumbly texture; its color varies from light yellow to deep orange, and fine shreds melt quickly and brown. As a dairy product, it provides protein, calcium, phosphorus, vitamins A and B12, and energy from fat; when consumed in moderation, it supports bone health and a feeling of fullness, but it also contains salt and saturated fats, so it's wise to use it consciously. Grated cheese is perfect for casseroles, pasta, pizza, gratins, sauces, and sandwiches, adding creaminess and stretchiness to dishes. It should be stored in the refrigerator tightly wrapped in parchment paper and foil or in a container, to be used within 1–3 weeks; grated cheese can also be frozen for 2–3 months, keeping in mind the possible change in texture.
