Description
Lemon zest is the thin, intensely yellow outer layer of the fruit with a fresh, citrus aroma and a slightly bitter, spicy flavor note; its granular structure hides essential oils that give it a distinctive scent. It is a source of vitamin C, fiber, flavonoids, and antioxidants that support the immune system, aid digestion, and exhibit anti-inflammatory and antimicrobial properties due to the presence of oils. In the kitchen, lemon zest enhances fish, seafood, poultry, salads, desserts, baked goods, sauces, and marinades, used as grated zest, thin strips, or candied; it adds freshness and aromatic bitterness. Store in an airtight container in the refrigerator for about a week or grate and portion for the freezer, which extends its shelf life, while candied zest should be kept in syrup or an airtight jar.
