Place a pot on the stove over medium heat. Slowly heat the drink for about 20 minutes until it becomes very hot and aromatic. It is crucial NOT TO BRING it to a boil. Boiling would destroy the delicate flavors of the spices and vitamins. The mulled wine is ready when an intense, spicy aroma fills the kitchen and steam rises from the surface of the drink.
Remove the pot from the heat. Taste the drink and decide if it needs additional sweetness. If so, this is the right time to add honey or maple syrup. Add one tablespoon at a time, stirring until completely dissolved and tasting after each addition until you reach your perfect level of sweetness.
