Description
Lemon zest (optional) is the bright, aromatic outer layer of the fruit, rich in essential oils with an intense, fresh citrus scent; finely grated, it adds a distinct, lively note, while the white part (albedo) is bitter and usually undesirable. Before use, it's worth thoroughly washing the fruit or choosing peels from organic sources to avoid pesticides. The zest contains trace amounts of vitamin C, flavonoids, pectins, and limonene, which exhibit antioxidant properties, support digestion and immunity, and may have anti-inflammatory effects. In the kitchen, it is suitable for cakes, cookies, sauces, marinades, dressings, fish and seafood, beverages, and cocktails, as well as for decoration. It is best stored briefly in the refrigerator in an airtight container, or it can be frozen in portions or dried and candied for longer preservation.
