Smoked plums
Description
Smoked plums have an intense, sweet-and-sour flavor with a distinct smoky note, a skin deepened to a dark mahogany color, and a meaty, slightly sticky flesh. They are rich in fiber, potassium, B vitamins, and vitamin K, as well as polyphenols and anthocyanins with antioxidant properties; the sorbitol and fiber content promote digestion, and their low fat content makes them a valuable snack in moderation. In the kitchen, smoked plums pair perfectly with meat (especially pork and game), complement cheeses, salads, sauces, braised dishes, chutneys, and desserts, adding depth and sweetness. They should be stored in a dry and cool place before opening, and after opening in an airtight container in the refrigerator; they can also be frozen, avoiding moisture and strong odors to preserve their aroma.
