Lemon juice
Description
Lemon juice has a distinct, fresh, and sour taste with a bright, straw-yellow color, often with a delicate pulp; its aroma is intensely citrusy and refreshing. It is low in calories, rich in vitamin C and antioxidants, and contains citric acid, which aids digestion, improves iron absorption, and supports immunity, although due to its high acidity, it is important to take care of tooth enamel protection. In the kitchen, lemon juice is used to season salads, marinades, sauces, fish, and seafood, balance sweet desserts and drinks, as well as preserve and enhance flavors. It should be stored in an airtight glass or plastic container in the refrigerator for 2–3 days or frozen in portions (ice cubes) for longer; store-bought, pasteurized juices have a longer shelf life.
