Cheddar cheese

Description

Cheddar cheese is a classic cow's milk cheese with a flavor ranging from mild to sharp, featuring nutty and slightly spicy notes in its more mature varieties. Its appearance can vary from creamy white to deep orange when annatto is used; the texture changes from smooth and stretchy in younger cheeses to more crumbly and grainy in aged cheeses. From a nutritional standpoint, cheddar is a rich source of protein, calcium, vitamins A and B12, and phosphorus, which support bone building, muscle function, and a feeling of fullness, although it is also calorie-dense and contains saturated fats, so it is best consumed in moderation. In the kitchen, cheddar is versatile: it melts beautifully in sauces, casseroles, burgers, mac and cheese, sandwiches, and soups, and it also tastes great on a cheese board. To preserve its flavor and texture, store it in the refrigerator wrapped in wax paper or parchment, then loosely in foil or a bag, in the coolest part; grated cheddar can be frozen, although it may change texture after thawing.
