Salt and pepper
Description
Salt and pepper are basic, universal spices: salt has a distinct, salty taste and comes in a crystalline, white or pink form, while pepper, most commonly black, has a sharp, pungent, and aromatic profile due to its piperine content. Salt does not provide calories and is the main source of sodium essential for electrolyte balance and nerve conduction, although excess can be linked to the risk of hypertension. Pepper contains antioxidants and compounds that improve digestion and the absorption of certain nutrients. In the kitchen, salt and pepper are used for almost everything: seasoning meats, fish, vegetables, soups, sauces, and salads; salt is also used for curing and baking, and freshly ground pepper best releases its aroma in both hot and cold dishes. They should be stored in airtight containers in a dry, cool, and dark place, away from moisture and heat sources; whole pepper retains its aroma longer than ground pepper.
