Raw tiger prawns
Description
Raw tiger shrimp have a characteristic, slightly sweet, marine flavor and are distinguished by their large, meaty structure with a striped shell in a gray-blue color; when cooked, they turn pink-white and firm. They are an excellent source of lean protein, low in calories, and rich in unsaturated omega-3 fatty acids, vitamin B12, selenium, and iodine, which support metabolism and thyroid function, although they contain a moderate amount of cholesterol. In the kitchen, they are suitable for quick frying, grilling, braising in sauces, pasta dishes, curry, skewers, and salads; they can also be used in tempura or—if intended for raw consumption—in ceviche and sushi. Store them chilled at a temperature of 0–2°C and use within 1–2 days, or freeze immediately at -18°C; thaw in the refrigerator and do not refreeze after thawing.
