Description
Dried mushrooms have an intense, concentrated umami flavor — earthy, slightly nutty, and meaty — and a dark, wrinkled, often shiny skin; after soaking, they become firm and regain the aroma of fresh mushrooms, and the soaking water creates a flavorful broth. Nutritionally, they are low in calories, rich in fiber, plant protein, B vitamins, and, when exposed to light, vitamin D, as well as minerals such as potassium, selenium, and copper; they contain antioxidants and compounds that support immunity and digestion, and their intense flavor allows for reduced salt usage. Typical applications include soups, risottos, sauces, stews, fillings, and plant-based dishes, where they add depth of flavor; the soaking water enhances the aroma of dishes beautifully. Store them tightly in a dry, cool, and dark place, away from moisture; in a sealed container, they remain stable for many months, and for longer storage, they can be frozen.
