Description

Cottage cheese is a white, grainy cheese with a delicate, slightly tangy flavor and a creamy, though granular, texture; available in low-fat, semi-fat, and full-fat versions, ranging from fresh and moist to more compact. It is a rich source of high-quality protein, calcium, and B vitamins, as well as a low-carbohydrate product that promotes satiety, muscle building, and bone health; fresh cottage cheese may also contain beneficial bacteria cultures that affect gut flora. In the kitchen, cottage cheese is versatile: as a base for spreads, fillings for dumplings and pancakes, an ingredient in cheesecakes, an addition to salads, dips, and desserts with fruits or honey, as well as an element in savory dishes with herbs. It should be stored in the refrigerator at a temperature of about 2–6°C, in an airtight container or covered with plastic wrap, draining the whey; after opening, consume within a few days, freezing is possible but changes the texture and is more suitable for further processing.
