Description
Dried edible lavender flowers are small, purple buds with a strong, floral-citrus aroma and a slightly camphoraceous note; the taste is gently sweet and perfumed, subtly enhancing both desserts and savory dishes. From a culinary and nutritional perspective, they are low in calories and rich in essential oils (including linalool), flavonoids, and other phenolic compounds that exhibit antioxidant and anti-inflammatory properties, and they are traditionally used as a stress reliever and digestive aid. In the kitchen, lavender pairs well with baked goods (cakes, cookies, lavender sugar), creams, ice creams, syrups, teas, and cocktails, as well as with lamb dishes and herb blends like Herbes de Provence; it combines wonderfully with vanilla, lemon, honey, and berries. Store in an airtight, opaque container in a cool, dry place, away from strong odors; whole buds retain their aroma longer than ground ones and are best used within 6–12 months.
