Fresh mint leaves
Description
Fresh mint leaves have an intense, refreshing flavor with a distinct hint of menthol and a cooling finish; their light green, lanceolate blades with serrated edges give dishes a fresh, vibrant appearance. They are low in calories, provide vitamins A and C, iron, manganese, and fiber, and the antioxidants contained in them (e.g., rosmarinic acid) support digestion, alleviate gastric discomfort, and exhibit anti-inflammatory and antibacterial properties. In the kitchen, mint pairs well with drinks (tea, cocktails, mojitos), salads, yogurt sauces, meats (especially lamb), desserts, and fruits, as well as serving as a fresh addition to soups and dips. To preserve the aroma, store the leaves in the refrigerator wrapped in a slightly damp paper towel in a sealed bag or standing in a glass of water like flowers; they can also be frozen in ice cubes with water or oil, and dried for longer storage.
