Purple sweet potato
Description
Purple sweet potato is a sweet and aromatic tuberous vegetable with intensely purple, creamy flesh and a thin skin that can range from deep purple to burgundy. It is sweeter than a regular potato, with a nutty and slightly floral note; when baked, it softens and takes on a creamy, almost roasted texture while retaining its vibrant color. Nutritionally, purple sweet potato provides complex carbohydrates, fiber, vitamins (especially vitamin C and B vitamins), and minerals such as potassium and manganese, and its color is due to strong antioxidants — anthocyanins — which have anti-inflammatory and neuroprotective effects. It works well baked, in purées, soups, chips, or desserts, and pairs nicely with citrus, goat cheese, thyme, cinnamon, and cumin. Store it in a dry, dark, and well-ventilated place at room temperature or slightly cooler (around 12–16°C), do not wash before storage, and use it within a few weeks.
