The "New Year's Champagne" cocktail is a light, sparkling drink based on prosecco or champagne with a delicate floral note from elderflower liqueur and fresh acidity from lemon juice. The cocktail combines bubbles with subtle sweetness and citrus freshness; serve in narrow flute glasses, garnished with fruit and lemon zest. Preparation
If you don't have ready-made simple syrup: prepare a quick 1:1 syrup. In a small saucepan, place 25 g of granulated sugar and 25 ml of water, heat over low heat, stirring with a wooden spoon until the sugar dissolves (about 1–2 minutes). Let it cool before use. In the recipe, we use 20 ml of the prepared syrup.
Mixing and serving
Prepare the cocktail base: in a jug, measure 80 ml of elderflower liqueur, 40 ml of fresh lemon juice, and 20 ml of sugar syrup. Stir for 8–10 seconds with a bar spoon or a regular spoon until the ingredients are well combined and a slightly shiny emulsion forms (do not dilute with ice at this stage).
For each glass, add a few ice cubes (or chill the glasses and skip the ice to avoid diluting the cocktail). If you want to use raspberries, place 3–4 raspberries in each glass (optionally, gently mash one with a teaspoon to release its aroma). Add 1 teaspoon of the prepared base (about 25 ml) to each glass.
Slowly pouring prosecco: very slowly pour 150 ml of prosecco into each glass (tilt the glass at an angle of 30–45°, pour along the side) — this will make the bubbles gentler and create an elegant, stable foam. Pour the last part to a level 1 cm below the rim of the glass.
Decoration
Decorate each glass: gently place 1–2 raspberries on the surface and add a mint leaf at the edge of the glass (optional). You can also twist a narrow strip of lemon peel over the glass to release the aromatic oils and place it on the rim of the glass.
Serving
Serve the cocktails immediately after preparation to maintain the fizz and freshness of the aromas. Inform the toast-makers to hold the glasses by the stem, not by the bowl, to prevent the drink from warming up quickly.

The finished cocktail is not suitable for long storage — the bubbles fade after a few minutes.
