Description
Fresh marigold petals have vibrant orange-yellow colors and a slightly fleshy texture; the taste is gently floral with a subtle peppery note and a slight bitterness that adds character to dishes. They are a source of carotenoids (provitamin A), vitamin C, flavonoids, and antioxidants, which contribute to anti-inflammatory effects, support immunity, protect cells, and have a beneficial impact on the skin and digestion; they are also traditionally used externally for minor irritations. In the kitchen, marigold petals work well as an impressive decoration for salads, cheeses, and desserts, a natural dye for butter, rice, and soups, as well as an addition to flavored oils and teas; they pair well with citrus fruits, honey, herbs, and mild cheeses.
