Fresh turmeric root
Description
Fresh turmeric root has a rough, brown skin and an intensely orange flesh with an earthy-spicy, slightly bitter aroma with a citrus note reminiscent of ginger. It is juicy and stains hands and utensils. Nutritionally, it provides few calories, fiber, vitamin C and B6, as well as minerals such as manganese and potassium; the most important compound is curcumin, valued for its anti-inflammatory and antioxidant properties, supporting digestion and immunity. In the kitchen, fresh turmeric is suitable for curries, soups, rice, marinades, smoothies, and "golden milk," pairing well with ginger, garlic, cumin, coconut milk, and citrus fruits, while black pepper increases the absorption of curcumin. Store unpeeled root wrapped in a paper towel in an airtight container in the refrigerator for 2–3 weeks; it can also be portioned and frozen (grated or chopped), remembering to protect hands from staining.
