Chives
Description
Chives are delicate, thin, hollow leaves with an intensely green color and small, purple flowers, with a fresh, mild onion flavor and a hint of garlic. Their subtlety makes them perfect for enhancing dishes without overpowering the aroma, and they are usually added raw as a finishing touch. They are low in calories and rich in vitamins A, C, and K, as well as folic acid and minerals such as potassium and calcium; they contain sulfur compounds and antioxidants that support immunity, heart health, and bone health. In the kitchen, they pair well with soups, salads, scrambled eggs, cottage cheese, fish, and potatoes, best added just before serving to preserve their aroma. They can be stored in the refrigerator wrapped in a damp towel in an airtight container or standing in a glass of water, and for longer storage, finely chopped chives can be frozen.
