Fresh baby spinach
Description
Fresh baby spinach consists of small, tender leaves with a deep green color and a delicate, slightly sweet, somewhat nutty flavor, free from the bitterness of older leaves. Its subtle structure causes it to wilt quickly when exposed to heat, while still retaining a wealth of vitamins and minerals. It is low in calories and a source of vitamins A, C, and K, folic acid, iron, magnesium, and fiber, as well as antioxidants such as lutein and zeaxanthin; it supports eye health, the skeletal system, and blood health, and helps regulate blood pressure due to natural nitrates. In the kitchen, baby spinach works well raw in salads and smoothies, lightly blanched in pasta, omelets, soups, and sauces, and pairs wonderfully with garlic, lemon, nuts, and cheeses. Store unwashed in the refrigerator in a perforated bag or wrapped in a paper towel to reduce moisture; best consumed within 3–5 days, and for longer storage, blanch and freeze.
