Description
Tapenade (olive paste) is an aromatic, intense paste with an olive-salty note, featuring distinct accents of capers, anchovies, garlic, and lemon juice. Its consistency can be smooth or slightly grainy, and its color ranges from green to dark brown depending on the olives used. Its flavor is concentrated and umami, so only a small amount is needed to add depth to dishes. Olive paste mainly provides monounsaturated fatty acids from the oil, polyphenols, and vitamin E, along with a small amount of fiber, which supports heart health and has antioxidant properties. Tapenade pairs well with bread, crostini, sandwiches, as a dip, or as an addition to pasta, salads, or marinades for fish and meats. Store in the refrigerator in an airtight jar, with a thin layer of oil on the surface, and use within 1–2 weeks or freeze portions for up to about 3 months.
