Description

Wakame is a delicate, brown-green seaweed with a soft, slightly slimy texture and a subtle, marine umami with a hint of sweetness. After rehydration, it becomes pliable and shiny, with characteristic wavy leaves. It is low in calories, rich in iodine, calcium, magnesium, iron, vitamins A, C, and K, as well as fiber and antioxidants (including fucoxanthin), which support thyroid function, bone health, and the circulatory system with moderate consumption. In the kitchen, wakame is perfect for miso soups, cold salads (sunomono), rice and noodle dishes, or as an addition to fish and tofu; it pairs well with sesame, soy sauce, rice vinegar, and citrus. Store dried wakame in a dry, cool, and shaded place, and after soaking, keep it in the refrigerator for a maximum of 2–3 days in an airtight container, changing the water frequently.
