Mustard seeds
Description
Mustard seeds are small, round seeds with a diameter of 1–2 mm, available in colors ranging from light yellow to brown to almost black; yellow seeds are milder, while brown and black have a sharper, spicier aroma that is released more intensely when toasted or crushed. They have nutty, slightly bitter, and peppery notes in flavor, which makes them excellent for balancing fatty and acidic ingredients in dishes. Mustard seeds are a source of fiber, plant protein, fatty oils, and minerals such as magnesium, manganese, and selenium, as well as phytochemical compounds with antioxidant and anti-inflammatory properties that may support digestion and metabolism. Culinary uses include making mustards, marinades, sauces, pickles, and tempering in Indian cuisine; they pair well with meats, fish, vegetables, and salads. They should be stored in an airtight container, away from light and moisture; whole seeds retain their aroma longer than ground seeds, which should be used quickly.
