Soba noodles
Description
Soba noodles are thin, usually gray-brown noodles made from buckwheat flour, with a slightly nutty, earthy flavor and a soft, somewhat chewy texture after cooking. They can be flat or round in appearance, and the color depends on the proportion of wheat flour — the more buckwheat, the darker the noodles. Buckwheat provides valuable proteins with some essential amino acids, fiber, minerals such as magnesium and manganese, and flavonoids (rutin), which support the circulatory system and glycemic control. However, it's important to remember that many blends contain wheat, so only 100% buckwheat is gluten-free. Soba works great in broths, cold salads, stir-fries, and as an accompaniment to fish or vegetables, pairing well with soy sauce, ginger, and sesame. Store dry noodles tightly in a cool, dry place; keep cooked noodles in the refrigerator for 2–3 days or freeze individual portions.
