Sesame seeds
Description
Sesame seeds are small, oval, and shiny, most commonly found in shades of white, beige, brown, or black; they have a delicate, nutty, and slightly sweet flavor that is enhanced when toasted. They are a concentrated source of healthy monounsaturated and polyunsaturated fats, plant protein, fiber, and minerals such as calcium, magnesium, iron, and zinc; they also contain lignans (sesamin, sesamolin) and plant sterols that support oxidative protection, a beneficial lipid profile, and the health of bones and the cardiovascular system. In the kitchen, sesame pairs well with bread, spreads (tahini), sauces, salads, Asian dishes, breading for meats and fish, and as a decorative addition to baked goods and sushi. It should be stored in an airtight container in a cool, dark, and dry place; for longer shelf life, it is best kept in the refrigerator or freezer, and toasted just before use to bring out its full aroma.
