Description
Dried bay boletes have an intense, earthy, and slightly nutty flavor with a distinct umami, and after drying, they take on a dark, wrinkled appearance; when soaked, they regain a firm, meaty texture and deep aroma. They are low in calories, providing protein, fiber, and B vitamins, as well as minerals such as potassium and selenium. They also contain polyphenolic compounds and beta-glucans, which support immunity and have antioxidant properties. In the kitchen, dried bay boletes are excellent for soups, sauces, risottos, dumplings, and fillings, as well as for braised meats and stews, and the soaking water makes a flavorful broth. They should be stored in an airtight, dry container in a cool, dark place; in conditions of high humidity, it is advisable to use vacuum packaging or keep them in the refrigerator. Before use, soak in warm water, and use the liquid in dishes for a fuller flavor.
