Description
Salad potatoes are a variety with thin skin and firm, waxy flesh, usually small or medium-sized, with a creamy or light yellow color. They have a delicate, slightly sweet flavor with a subtle starchy note and hold their shape after cooking, making them ideal for salads and dishes where texture is important. They are a source of complex carbohydrates, fiber, vitamin C, vitamin B6, and potassium, with low fat content, which promotes satiety and supports the cardiovascular system and proper blood pressure. In the kitchen, they work well in cold salads and spoon dishes, as an addition to vinaigrettes and mayonnaise, as well as for steaming, light sautéing, or baking. They should be stored in a cool, dark, and well-ventilated place (ideally 4–10°C), away from light and ethylene-releasing fruits; it is not advisable to keep them in the refrigerator or in plastic bags to avoid green skin and rapid spoilage.
