Yellow cheese (cheddar or gouda)
Description
Yellow cheese, especially cheddar or gouda, has a creamy to slightly crumbly texture, an intense, buttery-nutty flavor in younger varieties, and a more pronounced, spicy bouquet in aged cheeses. The color ranges from light yellow to deep orange, and the aroma is pleasantly full and inviting. Nutritionally, it is a good source of protein, calcium, phosphorus, and vitamins A and B12, which support bone health, neurological functions, and muscle recovery, although it also contains saturated fats and sodium, so it should be consumed in moderation. In the kitchen, it works well both cold, in sandwiches and cheese boards, and hot — in casseroles, cheese sauces, burgers, or tarts; it melts well and adds creaminess. Store in the refrigerator wrapped in parchment or special cheese paper and loosely in foil or a container to allow it to breathe; ideally at a temperature of 0–4°C. After opening, consume within 2–3 weeks; it can be frozen, but the texture will change.
