Preparation steps

Brewing

Boil 1000 ml of water in a kettle or pot. After boiling, set aside for 1 minute — the water should be just below boiling temperature (about 95–98°C). In the meantime, prepare a large pitcher (with a capacity of at least 1.5 l).

Use a kettle or a pot with a lid; the best is a glass or ceramic teapot with a capacity of at least 1.5 l. Do not use a metal strainer for brewing directly in the pot, it's better to brew in the teapot and then strain.

Place 10 g of linden flowers in a tea strainer or directly in a teapot. Pour hot water (about 95–98°C) over the flowers so that they are completely submerged. Cover the teapot with a lid or a saucer — steep for 8–10 minutes. After 8 minutes, check the aroma: the infusion should have a distinct floral scent and a light golden color.

Use a fine tea strainer or a reusable tea bag. Covering prevents the aroma from escaping and maintains the temperature. If the infusion is too weak, you can extend the steeping time to 12 minutes, but avoid bitterness.

Sweetening and Flavoring

To the warm (not boiling) infusion, add 60 g of Greater Poland honey. Stir with a wooden spoon or teaspoon until the honey completely dissolves — this usually takes 30–60 seconds. Taste the infusion and add more honey if needed, according to your preference (remember: honey is sweeter in warm liquid).

Use a wooden or silicone spoon (metal can speed up cooling). If you are preparing a drink for a child under 1 year old, omit the honey for safety reasons.

Wash the apple, cut off the top, and slice it thinly (about 3–4 mm). Add the apple slices to a pitcher with warm infusion — the heat will release the natural aroma and slight tartness of the fruit. Leave the slices in the infusion while it cools down.

Use a sharp knife and a cutting board. If you want a more intense apple flavor, grate a bit of the skin (only from organic fruit). Do not peel the apple if the skin is healthy and washed.

Chilling and serving

Leave the pitcher covered to cool for 30–40 minutes to room temperature. Then strain the infusion through a sieve into a clean pitcher or carafe to remove the flowers and apple remnants. Place in the refrigerator for at least 2 hours to ensure the tea is thoroughly chilled.

For straining, use a fine sieve or cheesecloth; a clean carafe will provide a better presentation. Chilling in the fridge for at least 2 hours gives a fuller, refreshing effect. If after 2 hours the drink is not cold enough, you can add ice cubes (optional).

Serve the tea in tall glasses filled with ice cubes (optional). Place 1 slice of apple and a sprig of mint (optional) in each glass as a decoration. If the drink is for adults, you can add a slice of lemon for acidity.
