Boil 1000 ml of water in a kettle or pot. After boiling, set aside for 1 minute — the water should be just below boiling temperature (about 95–98°C). In the meantime, prepare a large pitcher (with a capacity of at least 1.5 l).
Description
Refreshing linden tea served cold is a simple summer drink inspired by the tradition of Greater Poland, where linden has served for centuries as a home infusion for relaxation and colds. The delicate, floral aroma of linden flowers combines with the sweetness of local Greater Poland honey and a fresh, slightly tart slice of apple. The drink has a bright, golden color and a pleasant, balanced taste — perfect for grilled dishes, light salads, and hot afternoons. Serve well chilled, with ice and a slice of apple for decoration; it is enjoyed by both children (without honey for children under 1 year) and adults.

Preparation steps
Brewing
Place 10 g of linden flowers in a tea strainer or directly in a teapot. Pour hot water (about 95–98°C) over the flowers so that they are completely submerged. Cover the teapot with a lid or a saucer — steep for 8–10 minutes. After 8 minutes, check the aroma: the infusion should have a distinct floral scent and a light golden color.
Sweetening and Flavoring
To the warm (not boiling) infusion, add 60 g of Greater Poland honey. Stir with a wooden spoon or teaspoon until the honey completely dissolves — this usually takes 30–60 seconds. Taste the infusion and add more honey if needed, according to your preference (remember: honey is sweeter in warm liquid).
Wash the apple, cut off the top, and slice it thinly (about 3–4 mm). Add the apple slices to a pitcher with warm infusion — the heat will release the natural aroma and slight tartness of the fruit. Leave the slices in the infusion while it cools down.
Chilling and serving
Leave the pitcher covered to cool for 30–40 minutes to room temperature. Then strain the infusion through a sieve into a clean pitcher or carafe to remove the flowers and apple remnants. Place in the refrigerator for at least 2 hours to ensure the tea is thoroughly chilled.
Serve the tea in tall glasses filled with ice cubes (optional). Place 1 slice of apple and a sprig of mint (optional) in each glass as a decoration. If the drink is for adults, you can add a slice of lemon for acidity.
Fun Fact
Greater Poland has a long tradition of collecting linden — linden tea was used there not only as a beverage but also as a home remedy for relaxation and alleviating cold symptoms.

Tips
Serve very chilled in tall glasses with a slice of apple and a sprig of mint. For guests, prepare a carafe and a bowl of extra apple slices. For adults, you can serve a version with a splash of gin or rum as a summer cocktail.
Store in a sealed pitcher in the refrigerator for up to 48 hours. Do not add ice before storing — add ice cubes just before serving to avoid diluting the drink. Heating is not recommended — tea loses its freshness and aroma.
