Preparation steps

Ginger-honey syrup

Prepare the syrup: peel the ginger (use a teaspoon to scrape off the skin or a thin knife) and cut it into thin slices or grate it finely on a microplane. In a small saucepan, combine 15 g of grated/sliced ginger, 30 g of honey, and 60 ml of water (60 g). Add 1 star anise (5 g). Heat over low heat for 6-8 minutes until the honey is completely dissolved and the ginger releases its aroma; stir every 1-2 minutes to prevent the syrup from burning. After 6-8 minutes, remove the saucepan from the heat and let it sit for 5 minutes to allow the flavors to meld; the syrup should be aromatic, slightly golden, and fragrant with ginger.

Use a small saucepan with a capacity of ~0.5–1 l and a wooden spoon. Do not bring the syrup to a boil on high heat — it should only gently "wink," as too high a temperature will destroy the aroma of the honey. If you don't have fresh ginger, you can use 5 g of dried ginger, but the flavor will be less fresh.

Strain the syrup through a fine sieve into a small jug or bowl, pressing the grated ginger with a spoon to extract maximum liquid. Set aside the ginger slices (they can be used as decoration) and let the syrup cool slightly for 5 minutes — it should be warm, not hot.

Use a fine mesh strainer and a small spatula to gently squeeze out the syrup. If the syrup is too thick, add 10-20 ml of warm water and mix.

Preparing the juices

Squeeze fresh juices: cut 2-3 blood oranges in half and squeeze out 300 ml of juice using a manual juicer or a juicer. Squeeze one lemon to obtain 30 ml of juice. Prepare 150 ml of pomegranate juice separately (if using whole fruits, scoop out the seeds and squeeze the juice through a strainer). The orange juice should be thick, slightly pulpy; the pomegranate juice should be intensely red.

Use a manual citrus juicer for the best aroma; if you have a juicer, strain the pomegranate juice through a sieve to remove the white membranes and any leftover pulp.

Assembly

Fill two tall glasses (Collins or highball) two-thirds full with ice — about 100 g of ice per glass (a total of 200 g). Pour 150 ml of orange juice into each glass and 75 ml of pomegranate juice (in that order: first the orange, to create a layer). Due to the density of the juices, the pomegranate color will start to create a contrasting layer at the bottom and sides.

Use glasses of the same height and add the ingredients slowly, without pouring at a steep angle. If you want more distinct layers, pour the pomegranate juice slowly over the back of a spoon into the glass (spatula) against the wall.

Add syrup: pour 15 g (about 1 tablespoon) of warm (but not hot) ginger-honey syrup into each glass — pour slowly to allow the syrup to gently mix with the juices and add a spicy-sweet note. Then fill each glass with 100 ml of sparkling water (to the total volume), pouring slowly down the side to avoid disturbing the layers.

Use a measuring cup or bar spoon to dispense the syrup evenly. The sparkling water should be very cold; pour slowly by the spoonful to preserve the decorative bubbles.

Decoration

Finishing and decoration: on top of each glass, add 20 g of pomegranate seeds (if using) — sprinkle them gently to create red 'jewels' on the surface. Place a slice of orange on the rim of the glass (optionally a slice of cooled ginger) and add 2-3 mint leaves as decoration and for a fresh aroma.

Use a small teaspoon to arrange the seeds so they don't sink to the bottom; if you're adding mint, gently crush the leaves in your hands to release the aroma.

Serve immediately: serve the drink with a short straw and a long spoon for stirring. Before consuming, you can gently mix the drink to combine the syrup with the sparkling water and juices — you will notice the blend of flavors: sweetness, acidity, and the spiciness of ginger.
