Wash the apples under running water and dry them with a paper towel. Remove the stem, but do not peel the fruit — the skin helps the caramel stick. Insert a skewer into the top of the apple, straight into the center, so that it holds the apple securely while dipping.
Description
Caramelized apples are a classic autumn dessert perfect for Halloween: juicy Polish apples coated in sweet, slightly salty caramel and sprinkled with crunchy walnuts. The dish combines contrasting temperatures and textures — cold, firm apple and warm, gooey caramel with butter and cream, which forms a shiny shell when set. Served on a wooden board, decorated with chopped nuts and possibly melted chocolate or candy eyes, you will create an impressive dessert for a Halloween party. The recipe includes a simple technique for making caramel, safety tips, and variations: with cinnamon for a spiced aroma or chocolate topping for a bitter contrast.

Preparation steps
Preparation
Roasting nuts
Heat a dry skillet over medium heat. Add the walnuts and toast for 3–4 minutes, stirring frequently with a wooden spoon, until the nuts are fragrant and lightly browned. Transfer to a cutting board and chop finely with a knife.
Caramel
In a wide, heavy-bottomed saucepan (preferably 20–24 cm), place the sugar and water. Heat over medium heat, gently stirring with a spoon only at the beginning, until the sugar dissolves and a clear syrup forms (about 3–4 minutes). Once the syrup is light and free of crystals, stop stirring: tilt the saucepan to distribute the heat evenly.
Cook the syrup without stirring until it takes on an amber-gold color — watch closely: from clear to light gold (about 6–8 minutes), and then quickly to dark gold (another 1–2 minutes). The color should be a deep amber — this is a sign of caramelization. If you have a candy thermometer, the temperature should reach about 170–175°C.
Remove the saucepan from the heat. Quickly, but carefully, add the butter (cut into pieces) and stir with a metal spoon or spatula until the butter melts. Then, pour in the heavy cream in batches — the caramel will bubble up vigorously; stir constantly to achieve a smooth mixture. Add salt and, if desired, cinnamon, and mix thoroughly.
Set the caramel aside for 5 minutes to cool slightly — it should still be liquid but not burn when touched quickly (be careful!). When the caramel reaches a consistency similar to thick cream, it is ready for dipping the apples.
Assembly and decoration
Holding the apple by the stick, slowly dip it into the caramel, turning it to evenly coat the fruit. Lift the apple above the saucepan and allow the excess to drip off (gently rotate). If the caramel starts to drip too quickly, hold the apple above the saucepan for 10–15 seconds until the excess drips off.
After dipping, immediately roll the bottom of the apple in the chopped walnuts, pressing lightly with your hand (you can use a second person to sprinkle the nuts) or spreading the nuts on a plate and turning the apple over the plate. Place the finished apples on a baking sheet lined with parchment paper so the caramel can set.
Decoration
If you want to add a chocolate glaze: melt dark chocolate in a water bath — place a bowl with chocolate over a small pot of gently boiling water, stirring until smooth. Transfer the chocolate to a piping bag or a spoon and gently draw lines on the set caramel.
Allow the apples to set at room temperature for 20–30 minutes. After the caramel has set, you can add Halloween decorations (candy eyes, colored icing) or simply serve with a sprinkle of nuts. Before serving, cut a single portion or serve whole as a single dessert on a stick.
Serving and Portioning
Arrange the apples on a wooden board or plate, sprinkle with a generous amount of finely chopped nuts. Serve immediately — the caramel is best when it's fresh and slightly gooey. For Halloween, add candy decorations or toothpicks with paper flags.
Fun Fact
Caramelizing fruits is a tradition known since the 19th century — famous caramel apples gained popularity at fairs and autumn festivals. In many regions, caramel is used both as a sweet coating and as a carrier for various toppings.

Tips
Serve the apples on a wooden board or a dark plate to highlight the color of the caramel. For children, prepare small napkins and plastic plates. Alternatively, serve cut pieces as a portioned dessert with a scoop of vanilla ice cream.
Store the finished apples at room temperature for up to 24 hours. If you need to keep them longer, place them in the refrigerator separated by parchment paper (the caramel will become harder). To refresh the stickiness of the caramel a bit, briefly heat in the oven at 50°C (2–3 minutes).
