Dark chocolate
Description
Dark chocolate has an intense, slightly bitter taste with distinct notes of cocoa, nuts, and a subtle bitterness; its appearance is a shiny, deep, dark brown to almost black surface with a smooth texture that makes a characteristic, sharp snap when broken. In the kitchen, it is versatile — perfect for baking cakes and cookies, preparing ganache, sauces, and mousses, enriching hot beverages, and as a counterpoint to fruits, cheeses, or spicy dishes. Nutritionally, high-cocoa dark chocolate provides antioxidants (flavonoids), magnesium, iron, and fiber, which in moderate amounts can support heart health, improve mood, and help with blood pressure control. However, one should keep in mind its calorie and fat content. Store it in a cool, dry place at a temperature of about 15–18°C, in its original packaging or an airtight container, away from strong odors; avoid the refrigerator to prevent condensation and loss of shine.
