Preparation steps

Preparation of baked apple

Preheat the oven to 180°C (fan or conventional). Wash the apple thoroughly under running water and dry it with a paper towel. Using an apple corer or a small, sharp knife, remove the core, creating a hole in the center of the apple. Be careful not to pierce the apple all the way through - the bottom must remain intact so that the filling doesn't leak out during baking.

The easiest way is to use a special corer (it looks like a metal tube with teeth). If you don't have one, carefully cut out the seed cavity with a knife, making a circular incision around the stem, and then prying out the center.

Place the hollowed apple in a small baking dish that fits it snugly. Insert 2-3 cloves into the center of the apple, then pour in half of the honey (about 1 tablespoon, or 20g). The honey will fill the cavity and during baking will soak into the flesh of the apple, caramelizing it from the inside.

A baking dish will prevent juices from spilling onto the oven tray. It can be a small ramekin or simply a piece of aluminum foil with the edges folded up to create a bowl.

Place the dish with the apple in the preheated oven. Bake for about 20-25 minutes. The finished apple should be soft (check by inserting a fork - it should go in easily), and its skin slightly wrinkled. The juices that come out will be thick and aromatic.

Baking time depends on the size and variety of the apple. Check them after 20 minutes. Do not bake too long, so the apple retains its shape and does not completely fall apart.

Brewing and Serving Tea

While the apple is baking, prepare the infusion. In a teapot or small pot, place the black tea leaves, a cinnamon stick, the remaining cloves, a star anise, a sprig of rosemary, and two slices of orange. If using, add a slice of fresh ginger now.

Using whole spices instead of ground ones is key for the clarity and depth of flavor of the drink. Add the rosemary whole - it will be easier to remove later.

In a kettle, bring 500 ml of water to a boil. Pour the boiling water over the prepared ingredients in the teapot. Cover and let it steep for 5-7 minutes, so the tea and spices can infuse and release their aromas. Do not steep longer, as black tea can become bitter and astringent.

If you don't have a teapot with a strainer, you can brew everything in a pot and then strain the infusion through a fine sieve directly into the cups.

Prepare two large, preferably transparent, heatproof mugs. Carefully remove the baked apple from the oven and place one in each mug (if the apple is large, you can cut it in half). Strain the hot tea through a sieve, pouring it into the mugs directly over the apple.

Use thick kitchen gloves to take the apple out of the oven. Transparent cups or latte glasses will beautifully showcase the entire composition.

Add the remaining honey (about half a tablespoon per cup) to each cup and mix well until it dissolves. Taste and add more honey if needed. Finally, garnish the drink by placing a cinnamon stick and a slice of orange used for brewing inside. Serve immediately while it's hot.

Gently stir to avoid damaging the baked apple. A cinnamon stick can be used as a stirrer. This is the perfect time to add an optional splash of rum for adults.

It is best to drink this tea immediately after preparation. If you have any leftover brew, you can store it in the fridge for up to 24 hours and reheat it, but it will lose some of its fresh aroma. The baked apple can be stored separately in the fridge and used the next day.
