Preparation steps

Syrup

Prepare simple syrup: in a small saucepan, combine 100 g of sugar with 100 ml of water. Heat over medium heat, stirring with a wooden spoon, until the sugar completely dissolves (about 2-4 minutes). When the syrup starts to boil, reduce the heat and cook for another 1-2 minutes to slightly thicken. Remove from heat and let cool for about 15 minutes. The syrup should be clear and slightly runny — after cooling, pour it into a clean bottle.

Use a small saucepan with a diameter of 16-18 cm and a wooden spoon. Do not allow it to boil vigorously for a long time (the syrup may caramelize). The syrup is ready when a thin, flowing layer of sugar remains after dragging the spoon through it.

Preparation of ingredients

Chill the prosecco and vodka in the fridge for at least 2 hours before preparation or for a minimum of 30 minutes in the freezer (do not leave the alcohol in the freezer for too long). Prepare the pineapple juice and measure out 400 ml, squeeze fresh lemon juice into a measuring cup — you need 60 ml (about 3 medium lemons). Prepare ice (about 600 g of cubes) in a bowl. If you are using pomegranate seeds, extract them from the fruit and set aside about 10-12 seeds for garnish, keeping the rest in the bowl.

Use a juicer or a manual lemon squeezer. For measuring liquids, use a measuring cup for 25/50/100 ml. Don't worry if the lemons are a bit larger — the most important thing is the volume of juice.

Mixing the cocktail

In a large pitcher (preferably with a capacity of at least 2 liters), pour in 400 ml of pineapple juice, 60 ml of lemon juice, 100 ml of elderflower liqueur, and 200 ml of vodka. Add 30-50 ml (about 2-3 tablespoons) of the prepared simple syrup — if you prefer it less sweet, add 20 ml. Gently stir with a long spoon or stirrer for 6-8 turns, just enough to combine the ingredients (do not stir vigorously to keep the bubbles later).

Use a large glass pitcher and a long bar spoon or a regular wooden spoon. Stir gently — excessive stirring after adding the prosecco will cause the fizz to dissipate.

Adding ice and prosecco

Add about 400 g of ice cubes (half of the prepared ice) to the pitcher, gently stir 2-3 times, and then slowly pour in the chilled prosecco — pour in a thin stream along the side of the pitcher to preserve the bubbles. Gradually add the entire 1500 ml of prosecco, watching the level and foam — if there is excessive foam, wait 20-30 seconds for it to settle, and then add the rest.

Use a measuring cup to pour the prosecco slowly, preferably through a strainer or a spoon held upside down (to break the liquid), which will reduce the fizzing. This is a key step — pouring too quickly will result in a loss of carbonation.

Optional maceration and seasoning

If you want a more intense flavor, leave the pitcher in a cool place for 5-10 minutes to let the flavors meld. Taste the cocktail with a teaspoon — if it's too sour, add 10-20 ml of syrup; if it's too sweet, add another 10-20 ml of lemon juice.

Try in small sips: the flavor of the cocktail changes after adding prosecco. Adjust the sweetness/acidity gradually, by 10 ml.

Serving and decoration

Prepare 8 flûte glasses or other slender glasses. Place 4-6 pomegranate seeds (optional) in each glass, then slowly pour the cocktail to fill the glasses to about 80% full (leave some space for the foam). Add a mint leaf (optional) to each glass and sprinkle a pinch of edible glitter on top (max. 0.5 g per glass). Serve immediately — the glasses should be chilled and sparkling.

Use your hands to gently crush the mint leaf between your fingers before placing it on the glass — this will release the aroma. Add glitter very sparingly; start with a light pinch, check the effect, and add more if necessary.

Serve the cocktail immediately after preparation. It is best served on trays as a welcome drink at midnight or set up on a buffet table — guests can scoop the cocktail with a spoon or pour it themselves. Make sure you have a supply of cold glasses and extra ice in a bowl.
