An unusual, slightly forest-like touch comes from the addition of fresh rosemary, which beautifully balances the sweetness and creates a unique bouquet of scents. Preparation steps

Start by preparing the orange. Place it on a cutting board. Use a sharp knife to cut it in half crosswise. Set one half aside. Squeeze the juice from the other half directly into a small bowl or glass. Cut the remaining half into thick slices about 0.5 cm thick. They will not only add flavor but also serve as decoration.

Before cutting and juicing, remember to wash the oranges thoroughly. It's best to scrub them with a brush under hot, running water to remove wax and any possible impurities from the skin.

In a large pot with a capacity of at least 2 liters, combine all the ingredients. Pour the entire liter of cloudy apple juice into the pot. Then add freshly squeezed orange juice and sliced orange segments. Toss in two cinnamon sticks, about 8-10 whole cloves, and two fresh sprigs of rosemary. If you are using optional ingredients, now is the time to add the star anise.

Use a heavy-bottomed pot that distributes heat evenly. This will prevent the juice from burning on the bottom, especially if it contains natural sugars.

Place the pot on the stove over medium heat. Slowly heat the mixture, stirring gently with a wooden spoon from time to time. Your goal is to bring the drink to a point where it is very hot and small bubbles begin to form at the edges of the pot. This is called the 'boiling point'. Do not allow it to boil vigorously, as this will destroy the delicate flavors and may make the drink bitter. As soon as you notice the first signs of boiling, immediately reduce the heat to the minimum.

The key to an aromatic mulled wine is slow heating. Boiling the juice with the spices too vigorously can cause bitterness to be released, especially from the orange peel.

Cover the pot with a lid and let the drink gently simmer on the lowest heat for at least 20 minutes. This process, known as hot maceration, allows the spices and fruits to fully release their flavors and aromas into the apple juice. The longer you heat it (even up to an hour), the deeper and more intense the flavor will be.

If your stove heats too strongly even on the lowest setting, you can slightly lift the lid to allow excess steam to escape, which will prevent the drink from boiling.

After the cooking time is up, turn off the heat and remove the pot from the stove. Using a slotted spoon or tongs, carefully remove the larger pieces: orange slices, cinnamon sticks, rosemary sprigs, and star anise. To get rid of the cloves and smaller particles, strain the mulled wine through a fine sieve into a jug or another container.

Be careful, the drink is very hot. Pouring through a strainer is best done over the sink to avoid spills and burns.

Now it's time for any additional sweetening. If you are using honey, add two tablespoons to the hot, but not boiling, drink. Stir thoroughly with a long spoon until the honey is completely dissolved. Taste it, and if you find the mulled wine is not sweet enough, add more honey to your liking.

Adding honey to a drink at a temperature below 60°C helps preserve its valuable health properties. If you don't have a thermometer, simply wait 5-10 minutes after removing it from the heat.

Pour the hot mulled wine into the prepared mugs or heatproof glasses. To serve it elegantly, place a fresh slice of orange and a small sprig of rosemary in each vessel. Serve immediately while it is hot and most aromatic.

It's best to use thick glass or ceramic cups that will keep the heat for a long time. Transparent cups will also beautifully showcase the color of the drink and the decorations.

For extra decoration and aroma, you can add a fresh slice of orange, a small sprig of rosemary, or a cinnamon stick to each serving. For adults, just before serving, you can add 30 ml of dark rum, brandy, or orange liqueur to each glass.

Mulled wine can be stored in the refrigerator in a tightly sealed jar or bottle for up to 3 days. Over time, its flavor will become even deeper. Reheat it over low heat in a pot, without bringing it to a boil, to preserve its aroma.
