Fresh rosemary
Description
Fresh rosemary is an aromatic herb with narrow, needle-like leaves of deep green color and a slightly silvery sheen. Its flavor is intense, resinous with pine and citrus notes, adding a distinctive character to dishes; the sprigs are great for marinades, roasts, and grilled vegetables, as well as for oils, sauces, or bread. Nutritionally, rosemary provides small amounts of vitamins A and C, as well as minerals such as calcium and iron, and is particularly rich in antioxidants and anti-inflammatory compounds that support digestion and overall immunity. To maintain freshness, store the sprigs wrapped in a damp paper towel in an airtight container in the refrigerator or place them in a glass of water like a bouquet, and for longer storage, freeze them in oil cubes.
