This non-alcoholic mulled cider is based on naturally cloudy apple juice, which is slowly heated with a wealth of spicy seasonings – cinnamon sticks, cloves, and star anise. Freshness and a citrus note are added by slices of juicy orange, while a touch of ginger introduces a pleasantly spicy aftertaste. The whole is complemented by the subtle, forest aroma of fresh rosemary, which not only enriches the flavor but also serves as a beautiful decoration. The mulled cider has a deep, golden-amber color, and the scent that wafts during cooking fills the entire home with a festive atmosphere. It is an excellent choice for gatherings with family and friends, as an elegant drink for parties, or simply as a way to relax with a steaming cup in hand. It can be served as an alternative to traditional mulled wine.

Preparing the ingredients
Heating and flavoring
Choose a large pot, preferably with a thick bottom, with a capacity of at least 2 liters. Pour the entire liter of apple juice into it. Add all the prepared spices and fruits: sliced orange, ginger slices, cinnamon sticks, star anise, and cloves (if you haven't stuck them into the orange).
Place the pot on the stove over medium heat and slowly warm the mixture. Your goal is to bring the drink to the point where it is very hot and starts to steam, but it MUST NOT BOIL. When you see steam rising and small bubbles appearing at the edges of the pot, immediately reduce the burner to the lowest setting. Leave the mulled wine on low heat for about 15-20 minutes to allow the flavors and aromas of the spices to release and blend with the juice. Do not cover the pot.
Finalization and Serving
After 15-20 minutes, remove the pot from the heat. Now is the time for any additional sweetening. Using a spoon, taste the drink and assess its sweetness. If you find it not sweet enough, add honey (or maple syrup). Start with one tablespoon, mix thoroughly until completely dissolved, and taste again. Gradually add sweetener until you reach your perfect flavor.
Prepare mugs or glasses made of thick, heat-resistant glass. Using a ladle, carefully pour the hot mulled wine into the containers. Try to ensure that each serving has a slice of orange and some spice for decoration. Finally, place a fresh sprig of rosemary in each mug. Serve immediately while the drink is hot.
