This non-alcoholic mulled cider is based on naturally cloudy apple juice, which is slowly heated with a wealth of spicy seasonings – cinnamon sticks, cloves, and star anise. Freshness and a citrus note are added by slices of juicy orange, while a touch of ginger introduces a pleasantly spicy aftertaste. The whole is complemented by the subtle, forest aroma of fresh rosemary, which not only enriches the flavor but also serves as a beautiful decoration. The mulled cider has a deep, golden-amber color, and the scent that wafts during cooking fills the entire home with a festive atmosphere. It is an excellent choice for gatherings with family and friends, as an elegant drink for parties, or simply as a way to relax with a steaming cup in hand. It can be served as an alternative to traditional mulled wine.

Preparation steps

Preparing the ingredients

Start by thoroughly preparing the fruits and spices. Wash the orange very carefully under hot running water, using a vegetable brush to remove wax and impurities. Dry it with a paper towel. Then, using a sharp knife, slice the entire orange into pieces about 0.5 cm thick. Peel the ginger using a small spoon (scraping off the skin) or a knife and cut it into 3 thin slices.

It is best to use organic oranges, whose skin is not coated with chemicals. To enhance the aroma, you can poke cloves directly into the skin of a few slices of orange – they will look beautiful and you won't have to fish them out of the drink.

Heating and flavoring

Choose a large pot, preferably with a thick bottom, with a capacity of at least 2 liters. Pour the entire liter of apple juice into it. Add all the prepared spices and fruits: sliced orange, ginger slices, cinnamon sticks, star anise, and cloves (if you haven't stuck them into the orange).

A pot with a thick bottom prevents the sugars in the juice from burning and ensures even heat distribution, which is key to extracting flavors from the spices.

Place the pot on the stove over medium heat and slowly warm the mixture. Your goal is to bring the drink to the point where it is very hot and starts to steam, but it MUST NOT BOIL. When you see steam rising and small bubbles appearing at the edges of the pot, immediately reduce the burner to the lowest setting. Leave the mulled wine on low heat for about 15-20 minutes to allow the flavors and aromas of the spices to release and blend with the juice. Do not cover the pot.

This is the most important step! Boiling the drink will cause the spices to become bitter, and the delicate aromas will dissipate. Watch the drink – it should only 'flicker', not boil. After 15 minutes, your home will be filled with a wonderful, spicy aroma.

Finalization and Serving

After 15-20 minutes, remove the pot from the heat. Now is the time for any additional sweetening. Using a spoon, taste the drink and assess its sweetness. If you find it not sweet enough, add honey (or maple syrup). Start with one tablespoon, mix thoroughly until completely dissolved, and taste again. Gradually add sweetener until you reach your perfect flavor.

Adding honey to hot, but not boiling, liquid helps preserve its valuable health properties. Remember that apple juice is sweet on its own, so additional sweetening may not be necessary.

Prepare mugs or glasses made of thick, heat-resistant glass. Using a ladle, carefully pour the hot mulled wine into the containers. Try to ensure that each serving has a slice of orange and some spice for decoration. Finally, place a fresh sprig of rosemary in each mug. Serve immediately while the drink is hot.

If you prefer a perfectly clear drink without any 'sediment', you can strain it through a fine sieve before serving. You can gently crush a sprig of rosemary in your hands just before placing it in the cup to release even more essential oils.

Serve in thick, heat-resistant glasses or ceramic mugs to keep the warmth longer. Add a fresh slice of orange and a sprig of rosemary to each serving to enhance the aroma and visual effect. You can also add a few dried cranberries to the glass for color and extra sweetness.

Mulled wine can be stored in the refrigerator for up to 3 days. Before storing, it must be strained of spices and fruits (otherwise it will become bitter and cloudy). Pour the cooled drink into a glass bottle or jar. Reheat slowly over low heat, without bringing it to a boil.
