Serve hot (but not boiling) in small cups as a sweet, warming conclusion to the Christmas Eve dinner, optionally garnished with a cinnamon stick or a slice of lemon for decoration. Preparation steps

Prepare the tools and ingredients: measure 1000 ml of milk in a measuring cup or use a 1 l bottle, weigh 80 g of honey on a kitchen scale, prepare a tablespoon, a small saucepan (with a capacity of at least 1.5 l), a whisk or spoon, and a kitchen thermometer (optional). Set out cups (about 4 of 250 ml) on the countertop.

Use a medium-sized saucepan (1.5–2 l) with a thick bottom to prevent the milk from burning. If you don't have a scale, measure the honey with a spoon — 1 tablespoon of honey ≈ 21 g, but weighing is recommended for accuracy.

Pour the milk into a saucepan and set it over medium heat. Slowly heat the milk, stirring every 30 seconds with a whisk or spoon to prevent a skin from forming and to avoid scorching at the bottom. Heating time: 6–8 minutes from the moment it is placed on the heat, depending on the burner’s power. The goal is to reach a temperature of about 50°C; if you are using raw honey (straight from the beekeeper), do not exceed 40°C to preserve the enzymes and health properties.

If you don't have a thermometer, check the temperature by touch: a drop of milk on the inner side of your wrist should feel distinctly warm but not hot (around 45°C). Avoid boiling — do not let it come to a boil (no bubbles on the surface and steam should not be rising vigorously from the pot). The best is an even temperature without hot spots.

Add 1 pinch of salt (1 g) to the heated milk and, if using, 10 g (2 teaspoons) of vanilla extract. Whisk vigorously for 10–15 seconds to evenly distribute the salt and vanilla in the milk.

Adding vanilla while heating allows its aromas to be released better. If you are using a vanilla bean instead of extract, cut it lengthwise, scrape out the seeds, and add both the seeds and the pod to the saucepan, removing the pod before serving.

Remove the saucepan from the heat (important: the milk should not be on the heat anymore) and wait 10–20 seconds for the temperature to drop slightly. Add 80 g of honey to the warm milk and vigorously stir with a whisk or spoon for 45–60 seconds until the honey is completely dissolved and the drink becomes uniformly sweet. If the honey is very thick, gently warm it beforehand in a water bath or whisk it with a little warm milk in a separate container before adding.

Add honey after removing the milk from the heat, to avoid exceeding 40°C–50°C (especially important with raw honey). If you want a stronger cinnamon flavor, add a teaspoon of ground cinnamon now or use a cinnamon stick as a stirrer and remove it before pouring.

Pour the milk with honey into 4 cups of about 250 ml each. On top, you can lightly sprinkle each serving with a bit of cinnamon (optional) — ¼ teaspoon of cinnamon per cup — and optionally garnish with a cinnamon stick or lemon peel.

The best mugs are ceramic, which retain heat; avoid thin glasses that quickly lose warmth. Additionally, you can add a cinnamon stick to each serving for decoration and to enhance the aroma.

Serve immediately — the milk should be hot and pleasant to the touch, but not scalding (about 45–50°C, lower temperature if using raw honey). Drink slowly, preferably in a warm, calm environment after the Christmas dinner.

Note on temperature before serving to small children — cool to about 37°C–40°C to avoid burns. Honey is not recommended for infants and small children (risk of botulism) — for them, use a little sugar and boiled milk after consulting with a pediatrician.

If there is leftover milk with honey, cool it to room temperature within 30 minutes, transfer it to an airtight container, and store it in the refrigerator for up to 48 hours. Heat slowly over low heat to a maximum of 40°C (if you want to preserve the properties of raw honey), never allow it to boil. Do not store for longer than 48 hours due to the risk of changes in taste and microbiology.
