Preparation steps
Pour the milk into a saucepan and set it over medium heat. Slowly heat the milk, stirring every 30 seconds with a whisk or spoon to prevent a skin from forming and to avoid scorching at the bottom. Heating time: 6–8 minutes from the moment it is placed on the heat, depending on the burner’s power. The goal is to reach a temperature of about 50°C; if you are using raw honey (straight from the beekeeper), do not exceed 40°C to preserve the enzymes and health properties.
Add 1 pinch of salt (1 g) to the heated milk and, if using, 10 g (2 teaspoons) of vanilla extract. Whisk vigorously for 10–15 seconds to evenly distribute the salt and vanilla in the milk.
Remove the saucepan from the heat (important: the milk should not be on the heat anymore) and wait 10–20 seconds for the temperature to drop slightly. Add 80 g of honey to the warm milk and vigorously stir with a whisk or spoon for 45–60 seconds until the honey is completely dissolved and the drink becomes uniformly sweet. If the honey is very thick, gently warm it beforehand in a water bath or whisk it with a little warm milk in a separate container before adding.
Pour the milk with honey into 4 cups of about 250 ml each. On top, you can lightly sprinkle each serving with a bit of cinnamon (optional) — ¼ teaspoon of cinnamon per cup — and optionally garnish with a cinnamon stick or lemon peel.
Serve immediately — the milk should be hot and pleasant to the touch, but not scalding (about 45–50°C, lower temperature if using raw honey). Drink slowly, preferably in a warm, calm environment after the Christmas dinner.
