Preparing the toast
Cut two thick slices of sourdough bread, each about 1.5 cm thick. Using a kitchen brush, spread a thin layer of olive oil on each slice on both sides. Place the slices on the same baking sheet where you will bake the figs. Put the baking sheet in the preheated oven for about 4-5 minutes. The toasts should become slightly golden and crispy at the edges. After this time, remove them from the oven and set aside.
Preparing figs
Now it's time to stuff the figs. Take the goat cheese roll and using a small spoon or butter knife, place a portion of cheese (about 25g per fig) in the center of each slit fig. Gently open the 'petals' of the fig to make room for the cheese. Arrange the stuffed figs on a baking sheet lined with parchment paper. Drizzle each fig with a little honey (about half of the total amount), then sprinkle with fresh thyme leaves (pluck them from the stems), a pinch of sea salt, and freshly ground black pepper.
Baking and final assembly
Place the baking tray with figs back in the preheated oven (180°C) and bake for 8-10 minutes. The figs are ready when they become very soft, slightly caramelized at the edges, and the goat cheese melts and lightly browns. Remove the tray from the oven. On the plates, arrange the previously prepared warm toasts. Carefully place two baked figs on each toast. Drizzle everything with the remaining honey. If using the optional ingredient, sprinkle everything with coarsely chopped walnuts for added crunch.
