Preparation steps

Cut the lamb into large pieces and rub with ras el hanout.

Sear the meat in olive oil on all sides.

Slice the onion and sauté until soft.

Add ginger, cinnamon, and pour in 400ml of water.

Simmer covered for 1.5 hours on low heat.

Add the apricots and honey, and simmer for another 30 minutes.

Toast the almonds in a dry pan.

Serve the tagine in a traditional clay dish, at a warm temperature. Garnish the dish with fresh cilantro and toasted almonds. Serve with couscous on Moroccan-style plates.

🥡 Storage

Store leftover tagine in an airtight container in the fridge for up to 3 days. It can also be frozen for up to 3 months. Reheat on low heat or in the microwave, adding a little water to prevent it from drying out.
