This layered dessert combines delicate mascarpone cream with savoiardi biscuits soaked in coffee and espresso. Preparation steps

Brew strong espresso coffee and let it cool to room temperature. Add amaretto liqueur and mix.

Separate the egg yolks from the whites. Beat the yolks with powdered sugar until light and fluffy for about 5 minutes.

Gradually add the mascarpone to the whipped egg yolks, gently mixing with a spoon.

Beat the egg whites until stiff with a pinch of salt. Gently fold into the mascarpone mixture using an up-and-down motion.

Quickly dip each sponge cake in coffee (for 2 seconds on each side). Arrange the first layer in the dish.

Spread half of the mascarpone cream over the ladyfingers, distributing it evenly.

Place the second layer of soaked ladyfingers and cover with the remaining cream. Smooth the top.

Cover with foil and chill for at least 6 hours, preferably overnight. Before serving, dust generously with cocoa through a sieve.
