Spice infusion
In a medium saucepan with a capacity of at least 2 liters, pour in 250 ml of water. Add cinnamon sticks (10 g), cloves (3 g), star anise (6 g), and slices of ginger. Place the saucepan on the stove over medium heat and heat until the water begins to gently steam and the first light bubbles appear — about 4–6 minutes. Reduce the heat to low and simmer on very low heat for 10 minutes to allow the spices to release their aroma.
Combining bases
After 10 minutes of cooking the spices, remove the pot from the heat. Pour the prepared hot, but not boiling, water through a strainer into a larger pot (cleansing the liquid of whole spices), then add 750 ml of red wine to the pot. Carefully pour it in slowly to avoid disturbing the liquid too much. Add the squeezed juice from the orange (from the bowl) and the zest cut from one half of the orange (only the yellow part to avoid bitterness).
Heating the mulled wine
Place a pot with wine and infusion over low heat. Slowly heat for 8–10 minutes until the drink reaches a temperature of about 70–75°C (it should be hot and steaming, but not boiling). Stir occasionally with a wooden spoon to help the honey dissolve more easily. If you don't have a thermometer, heat until you see warm steam rising and small bubbles forming on the sides, but do not allow it to boil vigorously.
Sweetening and seasoning
When the drink is hot, remove the pot from the heat. Gradually add 80 g of honey: pour it in with a spoon, stirring constantly to dissolve it evenly. Taste the drink with a teaspoon (careful — it's hot!). If you prefer a sweeter mulled wine, add up to 20 g more honey to taste. If the drink is too sweet, you can add a few drops of lemon juice.
Optional enhancement
If you are preparing an alcoholic version for adults, after removing the pot from the heat, add 60 ml of dark rum. Gently stir it in. Do not heat the alcohol after adding the rum — always add it after removing from the heat.
Serving
Pour the mulled wine through a strainer into a jug, and then into mugs or glasses. Add a slice of orange and a cinnamon stick to each serving (you can also add a star anise as a decoration). Serve hot — best immediately after preparation.
Cleaning and Final Tips
After serving, rinse the strainer and pot with hot water. You can throw away the leftover spices or reuse them for sautéed pear. If the drink becomes too strong after standing for a while, dilute it with a bit of hot water.
