Preparation of ingredients

Wash the oranges under running water and dry them. Cut one orange into thin slices (about 5 mm) for decoration — keep the peel and flesh. Cut the second orange in half and squeeze the juice into a small bowl, removing the seeds. Peel the ginger root thinly with a teaspoon (peeler) and cut it into 3–4 thin slices about 2–3 mm thick.

Use a sharp knife to cut the orange and a small grater or teaspoon to peel the ginger. The orange slices will also serve as decoration — if you want, you can make a cut to secure the slice on the rim of the glass.

Spice infusion

In a medium saucepan with a capacity of at least 2 liters, pour in 250 ml of water. Add cinnamon sticks (10 g), cloves (3 g), star anise (6 g), and slices of ginger. Place the saucepan on the stove over medium heat and heat until the water begins to gently steam and the first light bubbles appear — about 4–6 minutes. Reduce the heat to low and simmer on very low heat for 10 minutes to allow the spices to release their aroma.

Use a saucepan with a thick bottom (diameter about 20–24 cm). Control the heat so that the water is just gently "blinking" — boiling too vigorously will release volatile aromas and the drink will become less fragrant. If the water is bubbling too much, reduce the temperature to the minimum.

Combining bases

After 10 minutes of cooking the spices, remove the pot from the heat. Pour the prepared hot, but not boiling, water through a strainer into a larger pot (cleansing the liquid of whole spices), then add 750 ml of red wine to the pot. Carefully pour it in slowly to avoid disturbing the liquid too much. Add the squeezed juice from the orange (from the bowl) and the zest cut from one half of the orange (only the yellow part to avoid bitterness).

Straining through a sieve will help remove small pieces of spices. Use a large pot with a capacity of at least 2 liters. Do not heat the mixture to boiling — the alcohol will evaporate and the flavor will change.

Heating the mulled wine

Place a pot with wine and infusion over low heat. Slowly heat for 8–10 minutes until the drink reaches a temperature of about 70–75°C (it should be hot and steaming, but not boiling). Stir occasionally with a wooden spoon to help the honey dissolve more easily. If you don't have a thermometer, heat until you see warm steam rising and small bubbles forming on the sides, but do not allow it to boil vigorously.

Use a kitchen thermometer if you have one — it's safest to maintain 70–75°C. A wooden spoon will help gently stir without the risk of scratching the pot.

Sweetening and seasoning

When the drink is hot, remove the pot from the heat. Gradually add 80 g of honey: pour it in with a spoon, stirring constantly to dissolve it evenly. Taste the drink with a teaspoon (careful — it's hot!). If you prefer a sweeter mulled wine, add up to 20 g more honey to taste. If the drink is too sweet, you can add a few drops of lemon juice.

Add the honey gradually and stir to avoid sticking. Taste in small sips — it's better to add a little more than to overdo it with sugar.

Optional enhancement

If you are preparing an alcoholic version for adults, after removing the pot from the heat, add 60 ml of dark rum. Gently stir it in. Do not heat the alcohol after adding the rum — always add it after removing from the heat.

Rum is optional — remember that after adding it, the drink is intended for adults. You can also use cognac or brandy instead of rum.

Serving

Pour the mulled wine through a strainer into a jug, and then into mugs or glasses. Add a slice of orange and a cinnamon stick to each serving (you can also add a star anise as a decoration). Serve hot — best immediately after preparation.

Use thick heatproof glasses or ceramic mugs. When serving, stick to the rule of 150–200 ml per portion. If serving in large goblets, be careful that they are not too hot to hold.

Cleaning and Final Tips

After serving, rinse the strainer and pot with hot water. You can throw away the leftover spices or reuse them for sautéed pear. If the drink becomes too strong after standing for a while, dilute it with a bit of hot water.

Do not leave leftover mulled wine in the pot for a long time — the taste may change. A quick rinse will make cleaning up later easier.
