Description
Star anise is an aromatic fruit shaped like stars, with a hard, brownish-red skin and an intense, sweet-spicy flavor reminiscent of licorice, due to the presence of the essential oil anethole. They have a low caloric value and are a source of essential oils and phenolic compounds with antioxidant properties; they are traditionally used to aid digestion, relieve bloating, and soothe coughs, and studies indicate antibacterial and antifungal properties with moderate use. In the kitchen, star anise pairs well with Asian dishes, broths, braised meats, and marinades, as well as sweet baked goods, liqueurs, and teas, where they add depth and a sweet spiciness. It is best to store them whole, in an airtight container, in a cool, dark place; whole stars retain their aroma much longer than ground ones, usually up to a year or two.
