Star anise
Description
Star anise is an aromatic spice with a characteristic five-pointed shape and dark brown skin, which emits an intense, sweet-spicy, anise-licorice aroma due to its anethole content. As a spice, it has low energy value and is rich in essential oils, flavonoids, and antioxidants; it is traditionally used to alleviate digestive issues, as an expectorant and antibacterial agent, although only edible star anise (Illicium verum) should be used. In the kitchen, it pairs well with Asian dishes (e.g., pho, braised meats), spice blends (five spice), baking, liqueurs, and mulled wine, adding depth and a sweet-spicy note. It is best to store whole stars in an airtight container in a cool, dark, and dry place; whole stars retain their aroma for about 1–2 years, while ground star anise loses its aroma much faster.
