Almond extract
Description
Almond extract is a concentrated liquid with an intense, sweet-bitter aroma and flavor reminiscent of fresh almonds and marzipan; visually, it is usually clear or slightly yellowish, available in both natural and synthetic versions. Its character gives dishes a warm, nutty note without the need for actual almonds. As an extract, it does not provide significant nutritional value or calories in typical usage amounts, so it is not a source of vitamins or protein, but it can enhance the flavor of dishes and help reduce sugar or fat. In commercial products, the main aromatic compound is benzaldehyde; it is advisable to avoid homemade extracts from bitter almonds due to the risk of amygdalin. Almond extract works well in baked goods, creams, ice creams, liqueurs, frangipane cakes, glazes, desserts, and beverages, and pairs excellently with chocolate, cherries, and vanilla. Store it in a tightly closed bottle, in a cool, dark place, away from heat sources; its shelf life is usually 12–24 months, and for natural extracts, it is worth checking the label.
