Baba ghanoush

🌱 Vegetarian 🌿 Vegan ⚠️ Allergen

Description

Baba ghanoush is a creamy paste made from roasted eggplant with a subtly smoky aroma, a mild, slightly tangy note of lemon, and a distinct sesame creaminess from tahini; it has a smooth, silky texture and a color ranging from light beige to slightly purple with darker skin fibers. It is low in calories, rich in fiber and antioxidants (including nasunin from the eggplant skin), provides minerals such as potassium and manganese, and the healthy fats from olive oil and tahini support the circulatory system and the absorption of fat-soluble vitamins. In the kitchen, it is used as a dip for pita and vegetables, a creamy spread for sandwiches, a base for salads, or an addition to grilled dishes and roasted vegetables. It can be stored in an airtight container in the refrigerator for 4–5 days; it is advisable to drizzle the top with olive oil to limit darkening, and portions can be frozen for 2–3 months, thawing slowly in the refrigerator before serving.
