Description

White miso paste (shiro miso) is a light beige, creamy paste with a mild, slightly sweet flavor and a distinct umami accent; it is gentler and less intense than dark miso, making it suitable for more delicate dishes. From a nutritional standpoint, miso provides plant-based protein, B vitamins, minerals (including manganese, zinc), as well as enzymes and probiotics present in the fermented product; however, it is important to remember its relatively high sodium content, so it should be consumed in moderation. White miso works great in soups (classic miso soup), sauces, dressings, marinades for fish and vegetables, glazes, and as a subtle flavor enhancer in creamy dishes and rice dishes.
