Ladyfingers (savoiardi)
Description
Savoiardi are light, elongated cookies with a light golden color, a delicate, crispy crust, and a soft, porous interior. They have a subtly sweet, vanilla-egg flavor and a pleasant, airy texture that easily absorbs liquids while maintaining their shape. The basic ingredients are eggs, sugar, and flour, resulting in a product with a relatively high carbohydrate and calorie content, low fat content, and a moderate amount of protein; they provide quick energy, are easy to digest, but are not a significant source of fiber or micronutrients and are not suitable for a gluten-free diet. In the kitchen, savoiardi are used for tiramisu, fruit tarts, cold desserts, trifles, and as a base for creams or cold cheesecakes; they pair well with coffee, liqueurs, and fruits. They should be stored in a dry, airtight container away from moisture and strong odors; an opened package is best consumed within a few days, and they can be frozen for longer storage, tightly wrapped to avoid losing their crispness.
