Description
Smoked bacon or pancetta is a salty-meaty pork product with a distinct marbling of fat and a pink-red color; bacon has a pleasant smoky aroma, while pancetta has a sweet-spicy, sunny profile resulting from curing and seasoning. In taste, both add depth thanks to the fat, which gives dishes a creaminess and intensity. Nutritionally, they are a good source of protein and B vitamins, iron, and zinc, but they also contain a lot of saturated fats, calories, and salt, so it's best to consume them in moderation. In the kitchen, they work well as an aromatic base: for carbonara, braised vegetables, soups, salads, sandwiches, and dishes with beans or potatoes. Store in the refrigerator in the original packaging or an airtight container at a temperature of up to 4°C and use within 3–5 days after opening; they can be sliced and frozen in portions for 1–2 months for convenience.
