Description
Oyster mushrooms in brine are delicate, meaty mushrooms with a subtle, slightly nutty and umami flavor; in brine, they gain a pleasant acidic-salty note. They resemble flat, fan-shaped caps in shades of gray-beige, often sliced into strips and submerged in a clear or spiced marinade. Nutritionally, oyster mushrooms are low in calories, low in fat, yet a source of plant protein, fiber, B vitamins, and minerals such as potassium and selenium; they also contain bioactive compounds, including beta-glucans, which support immunity and lipid profile. In the kitchen, they are suitable for salads, antipasti snacks, sandwiches, pizza, pasta, stews, and Asian dishes, pairing well with olive oil, garlic, herbs, and cheeses. Once opened, store in the refrigerator in the original brine, tightly sealed, and use within 7–14 days; unopened jars should be kept in a cool, dry place.
