Description
Fresh porcini mushrooms are characterized by an intense, nutty-earthy aroma and a meaty, firm texture. The cap has shades of brown, while the stem is creamy and meaty, giving dishes an elegant appearance and fullness of flavor. They pair wonderfully with risotto, creamy soups, sauces for meats and pasta, as well as for braising, sautéing in butter, or grilling; dried porcini greatly enhances the aroma of broths and sauces. Nutritionally, porcini are low in calories and provide protein, fiber, B vitamins, and minerals such as potassium, phosphorus, and selenium, as well as antioxidants and polysaccharides beneficial for the immune system. To maintain freshness, do not wash the mushrooms before storing, place them in a paper bag, and keep them in the refrigerator for 2–4 days; they can also be dried or sautéed beforehand and frozen.
